1) All the types of dishes served are awesome - From pot stickers to BBQ pork buns, I love the different varieties of food served. There are dumplings and veggies and spring rolls and tons of other things that are delicious but i'm not 100% sure what they are. With so many different options to choose from, its hard to not get overwhelmed, but since they are all small plates you can have the opportunity to try many different things (also, most of the dishes are relatively inexpensive). The must haves when I go to dim sum are BBQ pork buns, sticky rice, and shrimp dumplings. I fill the rest of my meal with whatever assortment of other dishes come around but these are the staples for me that I have to get every time I go.
2) The food comes around on carts - I love that when I sit down for dim sum, food is there in an instant. Dim sum operations work by having huge banquet halls that they can move the carts around in and have a high turn over of food. This only works because the carts are able to empty out quickly to many tables and restock to ensure that the food is still fresh. What this means to the diner is that you are getting a good variety of fresh foods coming to you table quickly. In addition to the carts, you can also order specific items if you haven't seem them coming around and a waiter will bring it by.
3) Dim sum is an excellent hangover cure - The keys in my mind to making a place a good hangover destination is having good food that has some grease to it and not having to wait too long for food. Dim sum overachieves in both categories. The carts ensure the food comes out quickly and there is plenty of fried food to coat your stomach to get you over that hangover. On top of that, an order of green tea will give you just the right amount of caffeine to put your hangover to rest.
4) Dim sum is great for groups - Dim sum halls usually are filled with very large tables which fit large groups. Groups of 8-10 people can all fit around these large tables and share plates using the spinning lazy susan in the middle of the table. Also, the more people you bring the more different plates you can try so invite everyone (especially me) if you're planning on going.
I am constantly searching for good dim sum but here is my list so far of places worth going to:
Ann Arbor - Great Lakes on carpenter doesn't have the carts but has excellent food in a building that clearly used to be a strip club.
Chicago - While I haven't tried too many yet in Phoenix in Chinatown serves up excellent dim sum with carts.
San Francisco - City View in the financial district served up such good dim sum that during our weekend in the city we went twice, highly recommend this spot.
Seattle - Harbor City in the international district serves up some of the best dim sum I've ever had, I'm considering a trip back just so I can eat there again.
